Recipe: Red Velvet Truffles

As the saying goes, a great way to the heart is through the stomach! These little truffles are college-budget friendly and delicious. For about $10 and a little over an hour, this sweet treat is the perfect addition to any Valentine’s Day gift, or to eat any time. Recipe makes about 40 truffles.

Ingredients:

1 box of red velvet cake mix (plus ingredients listed to make cake)

8 oz cream cheese (softened)

16 oz white chocolate

2 oz dark or semi sweet chocolate

Directions:

Prepare the 9×13 inch cake according to package directions, let cool completely and crumble cake into large bowl. Add softened cream cheese and knead gently with fingers until cream cheese is fully incorporated. Roll about 1 heaping teaspoon of the mixture into balls. Set in the fridge to chill. Melt white chocolate, remove cake balls from the fridge and using a fork, dip them one at a time into the melted chocolate. Place one ball at a time into the melted chocolate, roll the ball to coat. Set them back in fridge until chocolate is firm. Melt the dark chocolate, transfer into a small bag, cut the corner off and pipe melted chocolate onto the truffles. Let dry and enjoy!
