Blueberry Cream Cheese Scones

As the days grow colder, baking is a great way to warm up the house and fill up a hungry stomach. These blueberry cream cheese scones are a sweet-and-savory treat easy enough for anyone to make without breaking the bank.

Ingredients:

2 cups all purpose flour

2 Tbls. Baking powder

¼ tsp. Salt

4 Tbls. Granulated sugar

1/3 cup unsalted butter, chilled and cut into small chunks

½ cup milk

3 oz. Goat cheese (or substitute cream cheese)

¾ cup fresh or thawed frozen blueberries

Cream Cheese Glaze Ingredients:

4 oz. cream cheese, softened

½ cup powdered sugar

½ tsp. Vanilla extract

1 Tbls. Milk

Preheat oven to 400 degrees. Place flour, baking powder, salt, and sugar in a bowl. Mix until combined. Place chopped butter in flour mix. Toss to coat butter in flour. Using your fingers, rub the butter with your fingertips until it breaks down and looks like coarse sand. Add in goat/cream cheese and repeat.

Add in milk and mix with spoon until it forms a sticky ball. Mix in blueberries. Mix with your hands until combined.

On a cookie sheet lined with parchment paper, roll 2-inch balls of dough. Place on sheet; flatten balls to 1 inch thick. Bake for 15-20 minutes until light golden brown. Let cool on rack.

While scones are cooling, whip the cream cheese with powdered sugar. Add in the vanilla and milk and whip until smooth (about 1 minute). Top scones with glaze and enjoy.
