Ever since I could remember, my family has always made these peanut butter sugar cookies for Christmas. We always made them as a family, and then ate them as a family. This batch of cookies is fairly small for how big my family is, so we always doubled or even tripled making them. You can’t forget about saving some for Santa (hence the name). My family came to the conclusion that Santa probably gets enough chocolate chip cookies, not that there’s anything wrong with that, but we decided to shake it up a little bit and dub these scrumptious, peanut butter cookies as Santa Cookies.
Prep time: 30 minutes
Cook time: 15 minutes
Ingredients:
1 cup sugar, ¼ cup additional to roll cookies
1 stick butter, softened
1 egg
1 cup smooth, peanut butter
1 teaspoon vanilla
½ teaspoon salt
½ teaspoon baking soda
1 ½ cups flour
1 package of chocolate stars
Instructions:
-Preheat oven to 375 degrees.
-Cream the sugar and butter, then beat the egg into mixture.
-Mix in peanut butter and vanilla, until smooth and creamy.
-Stir salt, baking soda and flour until well combined.
-Roll into 1 inch balls and then roll in sugar and place on baking sheet. Lightly flatten each cookie with a fork.
-Bake for 11-13 min.
-Put 1 chocolate star on top of each cookie and put them back in the oven for 1 more minute.
You could always switch out the creamy peanut butter for crunchy peanut butter if you like a soft, crunchy cookie. One thing you’ll have to keep the same is the chocolate star. If you lightly press the star onto the cookie, then bake it another minute, it will melt perfectly on top of each one. The cookies are best eaten right out of the oven, accompanied with a large glass of milk to dip and dunk them in.
