Chocolate Zucchini Bread Recipe
As summer winds down and the trees begin to shed their leaves, many gardeners can’t help but feel overwhelmed by the never shrinking pile of zucchinis they have lying around. An easy (and delicious!) solution to this problem is shredding up those zucchinis in order to bake a fantastically tasty loaf of bread. Here’s a recipe for chocolate zucchini bread courtesy of my lovely grandmother.
Ingredients:
3 eggs
1 cup vegetable oil
2 cups sugar
1 Tbs. vanilla
2 cups shredded zucchini
2 ½ – 3 cups flour
1 tsp. salt
1 tsp. baking soda
¼ tsp. baking powder
1 cup mini chocolate chips (optional)
Directions:
Preheat oven to 350 degrees. Mix together eggs, oil, sugar, and vanilla. Fold in shredded zucchini. Sift dry ingredients together and blend into zucchini mixture. Mix in chocolate chips. Pour into two 4×8-inch sprayed loaf pans and bake for one hour at 350 degrees.
Yield: 2 large loaves
